Ok, so Peaches are in season, we’re getting some muggy nights in, and it’s the perfect time to make this hot and sensxy desert for two.

More fun if made together, maybe you can out-spice each other like we do. Just keep an eye on your designated half!

You will need:
1 Peach per couple.
Hokey Pokey ice-cream or Fresh Cream or Yoghurt.
Limes or Lime Juice
Cinnamon
Chilli Powder
Fresh Chilly(optional)
Raw Sugar or sugar.

Preheat your oven using the grill on full boar. Place an oven rack and tray or dish in the center(not too close to the grill).

Grip your ripe little peach, rub off the fuzz. I like to leave a little bit of peachey fuzz on there… cut it in half and scoop out the stone.
Make some criss cross cuts as deep as you like, i like to go deep. just don’t cut over the sides or punch through the skin or all the juices will run out. You’re gonna want those juices later.
Place a piece of lightly buttered tinfoil, shiny side up onto the tray/dish and put the peach halves on it so their tops are level.
Now the fun part, squeeze a bunch of fresh lime juice on those suckers and work a bit of pulp down into those criss-cross slits you made, spread them apart just ever so gently.
One the whole thing is all wet and sticky with its juices, sprinkle a generous dusting of cinnamon and chilli powder on there to get the heat going.
Now give ‘em a tickle up with the raw sugar, and fill the cavity left by the stone.
If you’re wanting to get extra pep then finely slice some fresh chilly rings as sprinkles.

Slide it easily into the oven, all the way in, taking care not to tip anything over. Now take out the ice-cream from the freezer so it can soften a little. Get your bowl and rub a a lime skin around the edge of your bowl, and lightly dust with chilli powder.

COOKING:

Depending on how grunty your oven is, this part will take at least 5 minutes. Keep an eye on ‘em. You’ll see the sugar melting and caramelising. We’re after a nice sticky golden crust. The peaches will go soft and pliable, and start to relax at this stage. Remember how I said keep an eye on your half - If it looks like it’s gone soft, and the juices are flowing down the sides of the cracks, its time to withdraw, whip it out quickly.

Otherwise, scoop yourself out a little mound of ice cream, and make a bit of a nest for the peach to nestle into.

Beat your partner to the oven, and get your half out, and carefully lift using two spoons and rest it onto the ice cream… pour any caramelised sugar/lime solution over the top and smile as it turns to toffee before your eyes.

Now have your partner ease a piece into your mouth, and as it melts let it slide down your throathole.

Congratulations. You made it to Heaven.
